Ingredients
- 1 lb Argentinian chorizo
- 1-2 French baguettes cut into chorizo length pieces
- 1 tbsp olive oil
Instructions
- Place the chorizo on the grill over direct medium high heat heat, turning them often to get a nice char on the outside. Remove from the grill.
- Butterfly the chorizo by making a cut running the length of the side of the link. Spread the link open exposing the inside of the sausage. Slice the baguettes open, and drizzle the insides with olive oil.
- Place the chorizo and bread cut side down on the grill. Char the inside of the chorizo and lightly brown the bread. Flip the chorizo, dress with some chimichurri and allow them to finish cooking.
- Remove the bread and chorizo from the grill, and assemble sandwiches with your choice of chimichurri or salsa.
